In collaboration with River Fish, pioneers in freshwater fish canning technology, we embarked on a mission to create a premium delicacy. This journey began with an idea: to develop a lightly smoked trout that could mature in a tin for years, gaining flavor and quality over time.

We joined the project with the idea of transforming this technological innovation into a product that could reach gourmet consumers worldwide. Today, my role focuses on bringing this exclusive trout to market, ensuring that our vision reaches customers globally.

Our Challenge

The challenge was to apply preservation techniques designed for saltwater fish to freshwater species, without sacrificing quality or taste. River Fish solved this with a breakthrough in their process, making it possible to preserve trout without the need for artificial preservatives.

Our Achievement
